This is my favorite deep fried method. It's also quick & simple.
 
Preparation of Fillets 
Remove all the red meat. 
Cut into 2" chunks and soak the striper in cheap beer overnight.This seems to keep the cooked fish extra moist

Coating mixture
Fill a 1 quart container with the following dry ingredients:
1 cup of Louisiana Fish Fry
1 cup of cornmeal
salt and pepper to taste
 
Frying
Fry in hot oil until golden brown.
I store any leftover dry ingredients, still in the sealed mixing container, in the freezer until I decide to fry up another batch.

Cheap Beer???? Some beer is just better( Shinerbock) than other, none of it is cheap anymore. Mike

Cheap beer.
The fish never bi#&*ed  to me about the beer quality and I'm a JD guy.

Paokie,
I like to soak the striper overnight in a mixture of 1 bottle of Tabasco and 1 quart of buttermilk. Don't tell Ax if you like it. He would just waste it on catfish.

Tabasco, egg, beer. After a little salt water bath. Then seasoned corn meal/ flour mix.

Try striper cooked  in a crab boil pkg. , then mixed with a can of clam chowder.
