Do you filet them or just gut, scale, cut head off and cook whole?

Your dinner looks fantastic! I fish for these more than stripers, many times the stripers come in the coves where I bluegill fish. And you can always move over 50 yards to a deep drop off and use a live bluegill for catfish bait. I will use frozen bluegill cut in half for catfish bait. panfish and catfishn taste better to me. And easier to catch.
