Quick & Easy to Fix...Blackened Striper ...This has became one of my favorites very quickly

  • I just dust the fish with commercial blackened seasoning and stick it on a red hot skillet.
  • If the skillet is super hot, the fish won't stick.
  • I use a cast iron skillet with ridges and do not use any oil.
  • Again the skillet must be hot. 
  • It will smoke, so it is best done outside but I do it inside and open all the windows
  • It's another quick method and has a bonus of being healthy.
Almost forgot, I always soak my striper in cheap beer overnight! This delicious striper was caught in August, soaked in beer, blackened and ate by some hungry customers in August.

Yes, I like the blackened too- I use a touch of olive oil in the pan and no beer soaking- may try it though!

If done inside, pull battires out of smoke alarm. Been there done that, mike lol

I have a ribbed skillet that is only used for blackening. No oil as it creates the smoke.
Fish will not stick IF the skillet is SUPER HOT, almost glowing.  [biggrin]

All windows open & fans on.
Later when the smoke is all out, spray with a lilac scented air freshener
