What is the best screw to use if I'm attaching something to the deck of the tritoon?

It's .75 inch marine grade plywood covered by some kind of vinyl......

Stainless marine screws like those used to secure leaning posts, etc.?

Depends on what your fastening and how much room u have..bolts, with locknuts and washers are real good..go to Fastens and ask them...they have lots of good stuff..

Stainless bolts would definitely be the best.  I'm attaching a mount for my trolling motor that will be used as a splasher.  Not much load on the mount thrust wise but definitely needs to be sturdy.

I already have one TM with splasher at the bottom of the lake.....

I was trying to spell Fastenal in my previous post,,, they havelots of stuff,,, and stainless steel. ..

I would try a thru bolt thru one of the horizontal beams if possible. I wouldn't trust the plywood. The dealership would know better.
