A buddy of mine brought this recipe back from Florida.  Love it and its super easy.

Remove red meat (I don't always, because I like the red meat)
Cut filets into thumb size strips  2-3 inches long.

Fill a large pot with water and bring to boil, while adding as much salt as the water will dissolve.

Once boiling, drop fish into water and remove from heat. Let cook for about 3 minutes.

Gently strain the fish strips in a collander. Once semi dry and cooled off a little, place strips into a container and chill overnight.

Serve with cocktail sauce, like you would boiled shrimp.

This reminds me, you can add a package of crab boil to the water, it really makes fish taste like crab.
